2C greens of your choice
2TBSP black beans
2 mini peppers chopped
1/4C cherry tomatoes
4oz cooked chicken breast
3 slices avocado
2TBSP plain greek yogurt
Squirt of lime juice
Step 1: place greens into salad bowl
Step 2: add beans, corn, peppers, tomatoes and chicken and toss
Step 3: top with avocado slices and salsa and yogurt, and squirt of lime juice
Step 4: mix the salsa and yogurt in to act as a dressing
Step 5: ENJOY!
Recommendation: If you haven't cooked the chicken, I highly recommend mixing a little olive oil, lime juice, cayenne pepper, salt, black pepper and garlic to your taste as a marinade for about 30 minutes before you cook the chicken.
